Handmade Pistachio Pesto served with fresh Cavatelli pasta: A Sicilian dream!
With this cooking class I will bring you virtually to Sicily, the biggest island in Italy and in the Mediterranean Sea. An amazing land rich in history and traditions, where art and culture intertwine with wonderful natural beauties. From the sea and its stunning beaches to the mountains and countryside, from the volcanos to the fishing villages, Sicily has a lot to offer.
The food here is slightly different from other Italian regions. It has been influenced by many different cultures that passed by throughout the centuries as this island represented a crucial central location for trades and explorations.
In this recipe, in fact, the main ingredient was introduced by the Arabic and Middle Eastern world and became one of the most famous delicacy of the island: The Pistachios from Bronte, a small town close to Mount Etna.
We will make the pesto from scratch together with fresh Cavatelli pasta to serve it with.
I can reassure this is an unforgettable recipe, delicate but full of flavour.
INGREDIENTS & SHOPPING LIST for 2 pax:
For the pesto:
- 100gr of pistachios
- 3 tbs of grated Parmesan cheese
- 5 leaves of fresh Basil
- 1 garlic clove
- 50ml of Olive Oil
- half a lemon
- salt and pepper
For the Cavatelli pasta:
- 100gr of 00 flour
- 100gr of fine semolina flour
- 100ml of warm water
- 2tbs of olive oil
To finish the recipe:
- half an onion
- 12 cherry tomatoes
- 150gr approx of Smoked Bacon lardons (cut in small squares).
If you prefer a vegetarian dish you can avoid this and use 2 small courgettes instead (courgettes can be added to the recipe anyway if you prefer even if you use the bacon, it will make the final result of the dish creamier and richer).
- 1 garlic clove
- half a glass of white wine
- fresh basil

- 1 chopping board
- 1 Standard blender, mini pro or hand blender
- 1 small bowl
- wrapping cling film
- 1 big frying pan for the sauce
- 1 big pot for the pasta
- forks, knives and spoons
