This summer marks 10 years since Tonkotsu Co-Founders Emma Reynolds and Ken Yamada opened their first ramen shop in Soho and, to mark the occasion, they’ve teamed up with AngloThai’s John Chantarasak to create an epic new special dish, available at Tonkotsu for one month from June 8th.
Over a series of successful AngloThai pop-ups and residencies during the last few years, John and his wife Desiree have developed a signature style that marries traditional Thai recipes with seasonal British ingredients, offering an exciting, original take on Thai food. The collaboration with Tonkotsu takes a similar idea seen through a different lens, combining fresh Thai herbs and flavours with one of Japan’s most famous dishes.
Bringing the flavour and heat of Northern Thailand to Tonkotsu’s signature dish, John and Ken have cooked up a fragrant, fiery ‘Thai Curry Tonkotsu’. For the base, Tonkotsu’s famed 18-hour pork broth has been enriched with lardo and spicy Northern Thai curry paste, topped with thin-cut homemade noodles, braised pork belly, pickled mustard greens, spring onion, coriander, lime wedge, seasoned egg, and a nest of crispy fried noodles.
Join us to see Ken and John shaking some noodles at Tonkotsu Shoreditch on 8 June. Ticket includes a collaboration ramen, Tonkotsu's cucumber pickles, and pint of Kirin or a Nori Chilli Margarita.
On this occasion, a vegetarian version of the ramen isn't available, we can substitute one of our house vegan/vegetarian ramen instead.
